A quick and delicious dish blending eggs with crispy tortilla, fresh vegetables, and cheese, perfect for breakfast or brunch.

  • 4 large eggs
  • 1 tortilla
  • 1/4 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Oil or butter for cooking

Instructions

  1. Whisk together the eggs, salt, and pepper until fluffy.
  2. Heat a skillet over medium heat and add oil or butter.
  3. Toss in the diced bell peppers and onions, and sauté until softened, about 3-4 minutes.
  4. Pour the whisked eggs into the skillet, cooking until they start to set.
  5. Sprinkle the shredded cheese evenly over the eggs and gently place the tortilla on top.
  6. Carefully lift the edges of the tortilla and flip it over. Cook for another 2-3 minutes until golden and crispy.
  7. Serve warm and enjoy!

Notes

For extra fluffiness, whisk in a splash of milk or cream. Feel free to swap veggies depending on what’s on hand.
