Indulge in the creamy yolks and crispy feta in this quick and easy breakfast dish, perfect for any meal.

Ingredients

  • 2 large eggs
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a non-stick skillet, heat the olive oil over medium-high heat until it shimmers.
  2. Evenly sprinkle the crumbled feta across the skillet to cover the bottom.
  3. Cook the feta for 1-2 minutes until it starts to soften and the edges turn golden brown and crispy.
  4. Carefully crack the eggs on top of the crispy feta, arranging them with space in between.
  5. Generously season the eggs with salt and black pepper.
  6. Let them cook for about 3-4 minutes, until the whites are set and yolks remain runny (cook longer for firmer yolks).
  7. If desired, sprinkle chopped parsley and red pepper flakes over the finished dish.
  8. Gently slide the eggs and crispy feta onto a plate and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet.
