Ingredients

Scale
  • 1520 chicken wings and drummies
  • Kosher salt
  • Ground black pepper
  • 1 tablespoon dried oregano leaves
  • ½ tablespoon kosher salt (more as desired)
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • ½ teaspoon turmeric
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon coriander
  • ¼ teaspoon ground ginger

Instructions

  1. Preheat your grill to medium-high heat, around 400-450℉. Don’t forget to clean those grill grates!
  2. Combine dried oregano, kosher salt, onion powder, garlic powder, paprika, turmeric, black pepper, cumin, coriander, and ginger in a bowl.
  3. Pat the chicken wings dry to ensure they crisp up nicely. Then, generously season them with the dry rub or simply salt and pepper.
  4. Place the wings on the grill. Cook flat wings for about 8-12 minutes and drummies for 12-16 minutes, flipping halfway through to achieve even grilling.
  5. Check for an internal temperature of 163℉ using a meat thermometer.
  6. Remove the wings from the grill and let them rest for about 10 minutes to reach a safe temperature of 165℉.
  7. Serve them plain or with your choice of dipping sauce.

Notes

For extra crispy skin, pat the wings dry before seasoning. Marinating the wings in the spice mix for a few hours or overnight enhances flavor.
