  • 2 large russet potatoes
  • 1/4 cup onion, finely chopped
  • 2 tablespoons vegetable oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Peel and grate the potatoes. Rinse the grated potatoes under cold water to remove excess starch, then squeeze out as much moisture as possible.
  2. In a large bowl, toss together the grated potatoes, finely chopped onion, salt, and pepper until evenly mixed.
  3. In a large skillet, heat the vegetable oil over medium heat until it shimmers.
  4. Spread the potato mixture evenly in the skillet. Press down gently with a spatula for even cooking.
  5. Allow to cook until the bottom turns golden brown, approximately 5-7 minutes.
  6. Carefully flip the hash browns using a large plate. Cook the other side for another 5-7 minutes until crispy and golden.
  7. Serve hot, topped with your favorite ingredients!

Notes

For a buttery flavor, consider substituting russet potatoes with Yukon Golds. Ensure to dry the grated potatoes well for the best texture.
