Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: vegetables (e.g. peas, carrots)

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the long grain white rice, cream of chicken soup, chicken broth, chopped onion, and minced garlic.
  3. Stir gently to combine, seasoning with salt and pepper to taste.
  4. Cover the crock pot and set the cooking time: low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the shredded cheese and any optional vegetables.
  6. Serve hot, mixing the chicken into the rice for a delightful bite on your plate.
