  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • ½ cup oil-packed sun-dried tomatoes, drained and sliced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • 2 tablespoons cornstarch (for thickening, optional)
  • 2 tablespoons fresh basil, chopped (plus more for serving)

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder.
  2. Optional searing: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the chicken for about 2 minutes on each side until golden brown, then transfer it to the crockpot.
  3. Layer the flavors: Sprinkle the minced garlic, sun-dried tomatoes, Italian seasoning, and optional crushed red pepper flakes over the chicken in the slow cooker.
  4. Create the sauce: Pour the chicken broth and heavy cream evenly over everything. Top it off with freshly grated parmesan cheese.
  5. Cook it slow: Cover and cook on low for 210 to 240 minutes, or until the chicken is tender and fully cooked.
  6. For a thicker sauce (optional): During the last 20 minutes of cooking, stir in a cornstarch slurry (mix 2 tablespoons of cornstarch with 2 tablespoons of water).
  7. Add freshness: Stir in the chopped fresh basil just before serving.
  8. Plate and enjoy: Serve the chicken hot, generously spooning the creamy sauce over it. Garnish with extra basil and parmesan for an elegant touch.

Notes
