Deliciously indulgent dark chocolate muffins that are protein-packed and perfect for a healthy snack or breakfast.

Ingredients

  • 1 cup Kodiak pancake mix
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup honey or maple syrup
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the Kodiak pancake mix, unsweetened cocoa powder, and chocolate protein powder.
  3. In another bowl, whisk together the milk, honey (or maple syrup), and eggs until well combined.
  4. Pour the wet mixture into the dry ingredients. Mix until just combined, being careful not to overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be served warm with almond butter or honey. Store in an airtight container at room temperature for up to three days.
