A hearty and satisfying breakfast dish wrapped in a tortilla, quick to prepare and customizable with various ingredients.

  • 4 large tortillas
  • 6 large eggs
  • 1 cup cheddar cheese (shredded)
  • 1 cup cooked sausage or bacon (chopped)
  • 1 cup fresh veggies (diced, like bell peppers or onions)
  • 1/2 cup sour cream (or Greek yogurt)
  • Hot sauce (to taste)

Instructions

  1. In a bowl, whisk the eggs until well blended.
  2. Pour the eggs into a hot skillet. Cook gently, stirring, until the eggs are fluffy and fully set—about 3-4 minutes.
  3. In the same skillet, add the chopped sausage or bacon, and cook until crispy and browned, approximately 5-7 minutes.
  4. On a large tortilla, layer the scrambled eggs, cooked sausage or bacon, shredded cheese, diced veggies, and a dollop of sour cream. Add hot sauce to taste.
  5. Carefully bring the edges of the tortilla towards the center, tucking in all the fillings to create a compact wrap.
  6. Heat a non-stick skillet over medium heat. Place the Crunchwrap seam-side down and cook for 3-4 minutes until golden brown and crispy. Flip and repeat on the other side.

Notes

Serve with fresh fruit, crispy hash browns, or a refreshing smoothie. Store leftovers tightly wrapped in the fridge for up to 3 days.
