A satisfying and simple breakfast wrap filled with scrambled eggs, sausage, cheese, and fresh veggies, all wrapped in a warm tortilla.

Ingredients

  • 4 large tortillas
  • 6 large eggs
  • 1 cup cheddar cheese (shredded)
  • 1 cup cooked sausage or bacon (chopped)
  • 1 cup fresh veggies (diced bell peppers and onions)
  • 1/2 cup sour cream
  • Hot sauce (to taste)

Instructions

  1. Whisk the eggs in a mixing bowl until well combined.
  2. Cook the beaten eggs in a hot skillet for about 3-4 minutes until fluffy.
  3. In the same skillet, add the chopped sausage or bacon and cook until crispy, about 5-7 minutes.
  4. On a large tortilla, layer scrambled eggs, sausage or bacon, cheese, diced veggies, sour cream, and hot sauce.
  5. Carefully fold the tortilla into a parcel, tucking in the sides as you go.
  6. Heat a skillet over medium heat and place the crunchwrap seam-side down. Cook for about 3-4 minutes or until golden brown and crispy.
  7. Flip and repeat on the other side.
  8. Serve hot with salsa or avocado.

Notes

For a healthier twist, consider adding avocado or spinach, or using different cheeses according to your preference.
