A hearty and quick breakfast, the Easy Breakfast Crunchwrap is customizable with scrambled eggs, turkey sausage, fresh veggies, and cheese all wrapped in a crispy tortilla.

Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked turkey sausage or turkey bacon, chopped
  • 1 cup fresh veggies (bell peppers, onions, spinach, or tomatoes), diced
  • 1/2 cup sour cream or Greek yogurt
  • Hot sauce, to taste

Instructions

  1. Whisk the eggs and season them lightly with salt and pepper.
  2. Heat a nonstick skillet over medium heat and add a bit of oil. Pour in the eggs, stirring gently for about 3 to 4 minutes until they’re fluffy.
  3. Add the chopped turkey sausage or turkey bacon to the skillet. Sauté over medium heat until heated through and slightly browned, about 5 to 7 minutes.
  4. Lay a flour tortilla flat on a clean surface. Spoon a quarter of the scrambled eggs into the center of the tortilla.
  5. Layer on the turkey sausage or bacon, sprinkle with cheddar cheese, and add your choice of diced veggies. Top it off with a dollop of sour cream or Greek yogurt and a drizzle of hot sauce, if desired.
  6. Fold the edges of the tortilla around the filling, creating pleats. Press lightly to compact everything.
  7. Heat a skillet over medium heat and place the wrap seam side down. Cook for 3 to 4 minutes until golden brown.
  8. Flip the crunchwrap and cook the other side for another 3 to 4 minutes.
  9. Remove from the skillet, let it rest for a minute, then slice in half and serve warm.

Notes

Experiment with your choice of fillings and spices for added flavor. These crunchwraps are perfect for meal prep and can be stored in an airtight container in the refrigerator for up to 3 days.
