A quick and comforting homemade Chicken Parmesan that combines crunchy breading with cheesy goodness, perfect for any weeknight meal.

Ingredients

Scale
  • ½ cup all-purpose flour
  • 2 eggs
  • ⅔ cup seasoned Italian bread crumbs
  • ⅓ cup freshly grated Parmigiano-Reggiano cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh herbs (thyme, parsley, chives, or rosemary)
  • 34 boneless skinless chicken breasts (about pounds), pounded ¼ inch thick
  • Extra salt and freshly ground black pepper for seasoning
  • ¼ cup olive oil
  • Lemon wedges for serving

Instructions

  1. Prepare the breading station: Set up three large shallow bowls. Fill the first one with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, grated cheese, salt, pepper, and herbs.
  2. Season the chicken: Generously season both sides of the chicken breasts with additional salt and pepper.
  3. Bread the chicken: Dredge each chicken breast in the flour, dip it into the egg mixture, and finally coat it with the breadcrumb mixture.
  4. Cook the chicken: Heat the olive oil in a large sauté pan over medium heat. Add the breaded chicken and cook for 2-3 minutes until golden. Flip and cook for another 2-3 minutes until fully cooked.
  5. Serve: Plate the hot chicken, garnishing with lemon wedges for a fresh squeeze before digging in.

Notes

Pound the chicken to even thickness for quick and even cooking. Experiment with different herbs to customize the flavor.
