A delightful and budget-friendly Chicken Parmesan recipe combining crispy chicken, tangy tomato sauce, and melted cheese.

  • 28 oz crushed tomatoes
  • 2 large sprigs basil
  • 6 garlic cloves, minced
  • Kosher salt to taste
  • 1 small yellow onion, diced
  • Black pepper to taste
  • 3 tbsp extra-virgin olive oil
  • 6 boneless, skinless chicken cutlets
  • 1 cup panko bread crumbs
  • 1 cup vegetable oil
  • 1 cup finely grated Parmesan
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 3/4 cup all-purpose flour
  • Chopped fresh basil for serving
  • 1 cup shredded mozzarella

Instructions

  1. Prepare the Sauce: Heat olive oil in a saucepan over medium heat. Add onion and sauté until translucent. Stir in garlic, cook for another minute. Add crushed tomatoes, season with salt and pepper, and simmer for about 20 minutes.
  2. Prep the Chicken: Set up a breading station with flour and garlic powder in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
  3. Breading Process: Dredge chicken cutlets in the flour mixture, dip in beaten eggs, and coat with panko breadcrumbs.
  4. Fry the Chicken: Heat vegetable oil in a skillet over medium-high heat. Fry breaded chicken cutlets for about 4-5 minutes on each side until golden brown. Transfer to a plate lined with paper towels.
  5. Assemble and Bake: Preheat oven to 375°F. In a baking dish, spread a layer of sauce, layer fried chicken cutlets, top with more sauce, shredded mozzarella, and grated Parmesan. Bake for approximately 20 minutes.
  6. Garnish and Serve: Let the dish rest for a few minutes, then sprinkle fresh basil on top before serving.

Notes

For a healthier spin, bake the chicken cutlets instead of frying. Use store-bought marinara for a quicker option.
