A comforting and decadent chicken dish with a creamy garlic sauce and sun-dried tomatoes, perfect for date nights or family dinners.

Ingredients

  • 4 medium boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup heavy cream (full-fat)
  • ½ cup chicken broth (low-sodium preferred)
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons flour (all-purpose or gluten-free blend)

Instructions

  1. Pat dry the chicken breasts and season them with salt and pepper to taste.
  2. In a large skillet, heat the olive oil and butter over medium-high heat.
  3. Add the seasoned chicken and cook for 4–5 minutes on each side until golden brown. Transfer to a plate and keep warm.
  4. Reduce the heat to medium and add the minced garlic. Sauté until fragrant.
  5. Stir in the chopped sun-dried tomatoes and cook for about 2 minutes.
  6. Sprinkle the flour over the mixture and stir it in.
  7. Gradually pour in the chicken broth while stirring to prevent lumps.
  8. Add the heavy cream and allow the mixture to simmer for 3–4 minutes until it thickens.
  9. Stir in the Parmesan cheese until smooth and creamy.
  10. Mix in the chopped basil and the optional red pepper flakes.
  11. Return the chicken to the pan, spooning the sauce over it, and heat through for 1–2 minutes.
  12. Serve hot, either over pasta, rice, or creamy mashed potatoes.

Notes

Feel free to swap out chicken for turkey or tofu for a vegetarian version. Store leftovers in an airtight container in the fridge for up to three days.
