  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 tablespoons olive oil

Instructions

  1. Mix together the soy sauce, pineapple juice, brown sugar, minced garlic, and grated ginger in a bowl.
  2. Marinate the chicken in this mixture for at least 30 minutes.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the chopped onion and bell pepper, sautéing until they are soft and fragrant.
  5. Remove the chicken from the marinade and place it in the skillet. Cook until golden brown and fully cooked, about 5-7 minutes on each side.
  6. Pour the remaining marinade into the skillet and let it simmer for another 5 minutes.
  7. Serve the chicken hot, garnished with fresh pineapple or green onions.
