  • 1/2 cup cottage cheese
  • 1/2 cup cooked black beans
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1 avocado, sliced
  • 4 whole wheat tortillas
  • Salt and pepper to taste
  • Salsa or hot sauce for serving

Instructions

  1. In a bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and pour in your egg mixture. Stir occasionally, ensuring the eggs scramble and cook thoroughly.
  3. Add the black beans, diced bell peppers, and chopped spinach, cooking just until heated through.
  4. Lay a tortilla flat on your workspace and spoon the warm egg mixture down the center. Add avocado slices on top.
  5. Carefully roll the tortilla tightly, folding in the ends to secure the filling. Repeat with any remaining tortillas.
