A comforting, low-carb chicken casserole packed with shredded chicken, vibrant veggies, and gooey cheese—perfect for weeknight dinners.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower, riced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If needed, cook the chicken: Grill or boil it until there’s no pink and then let it cool before shredding.
  3. In a large mixing bowl, combine the shredded chicken, broccoli florets, riced cauliflower, softened cream cheese, sour cream, garlic powder, and half of the cheddar cheese. Season with salt and pepper to taste.
  4. Transfer the mixture to a greased 9×13-inch casserole dish, spreading it evenly.
  5. Top with the remaining cheddar cheese.
  6. Bake in the oven for about 30-35 minutes, or until the casserole is bubbling and golden on top.
  7. Allow it to cool slightly before serving. If desired, garnish with chopped green onions.

Notes

For quicker prep, use cooked rotisserie chicken. You can also swap cheddar cheese for mozzarella or other low-carb veggies to suit your taste.
