  • 4 pieces Boneless Chicken Breasts
  • Salt and Black Pepper, to taste
  • 3 tbsp Olive Oil
  • 2 cloves Garlic, grated
  • 3/4 cup Chicken Broth
  • 2/3 cup Heavy Cream
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Oregano
  • 1/3 tsp Chili Flakes
  • 1/3 cup Parmesan, grated
  • 1/4 cup Basil, fresh, chopped
  • 1/2 cup Sun-Dried Tomatoes, chopped

Instructions

  1. Prep the Chicken: Pat the chicken breasts dry and season both sides with salt and black pepper.
  2. Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 5-7 minutes on each side until they are golden brown all over. Remove them from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add the grated garlic and sauté for 30 seconds until fragrant. Pour in the chicken broth, scraping the bottom of the skillet to release all the browned bits.
  4. Add Cream and Seasoning: Stir in the heavy cream, dried thyme, oregano, and chili flakes. Let this simmer gently for about 3 minutes. Then add the grated Parmesan and chopped sun-dried tomatoes, mixing until the cheese is melted and smooth.
  5. Combine Chicken and Sauce: Return the browned chicken back to the skillet. Simmer everything for another 5-10 minutes until the chicken is fully cooked through and coated in the creamy sauce.
  6. Garnish and Serve: Once done, garnish with fresh basil and additional Parmesan if you like before serving.
