A delightful chicken dish simmered in a creamy sauce with sun-dried tomatoes and Parmesan cheese, perfect for weeknights or special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 1 teaspoon Italian seasoning
  • 1 pinch red pepper flakes (optional)
  • 2 tablespoons fresh chopped basil or parsley (for garnish)

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season generously with salt, pepper, garlic powder, and paprika.
  2. Sear to perfection: Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 5–6 minutes on each side until golden brown. Transfer to a plate and keep warm.
  3. Make the creamy sauce: In the same skillet, add minced garlic and sauté for about 30 seconds. Pour in the chicken broth, scraping any browned bits from the pan.
  4. Stir in the creamy goodness: Add heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and optional red pepper flakes. Let simmer on low for 3–5 minutes until thickened.
  5. Bring it all together: Return the seared chicken to the skillet and spoon sauce over it. Simmer for another 5 minutes to blend flavors.
  6. Garnish and serve: Sprinkle with fresh basil or parsley. Serve over pasta, mashed potatoes, or alongside steamed vegetables.

Notes

Store leftovers in an airtight container for 3–4 days. Reheat gently, adding broth or cream if the sauce thickens.
