A quick and impressive dish featuring chicken in a creamy sauce with garlic and sun-dried tomatoes, perfect for romantic dinners or family nights.

  • 34 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (low sodium)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ⅓ cup sun-dried tomatoes, finely chopped
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Season the chicken: Generously sprinkle salt and pepper on both sides of the chicken breasts.
  2. Sear the chicken: In a skillet, heat the olive oil and butter over medium heat. Sear the chicken until both sides are golden brown, about 5-7 minutes. Remove the chicken and set aside.
  3. Sauté garlic: In the same pan, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Deglaze: Pour in the chicken broth, scraping the browned bits from the bottom of the skillet.
  5. Make the sauce: Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes (if using). Let the mixture simmer for 2–3 minutes until slightly thickened.
  6. Return the chicken: Place the chicken back in the skillet and let everything simmer for an additional 5–8 minutes until the chicken is cooked through and the sauce has thickened.
  7. Garnish and serve: Top with fresh basil or parsley and enjoy hot with pasta, rice, or mashed potatoes.

Notes

For a different flavor, substitute chicken thighs or light cream. Store leftovers in an airtight container for up to 3 days.
