A creamy and savory chicken dish with sun-dried tomatoes that is quick to prepare and perfect for weeknight dinners.

  • 4 boneless chicken breasts
  • Salt and black pepper to taste
  • 3 tbsp olive oil
  • 2 cloves garlic (grated)
  • 3/4 cup chicken broth
  • 2/3 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/3 tsp chili flakes
  • 1/3 cup grated parmesan
  • 1/4 cup fresh basil (chopped)
  • 1/2 cup sun-dried tomatoes (chopped)

Instructions

  1. Start by patting the chicken breasts dry and generously season with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat. Cook the chicken for about 8-10 minutes on each side until golden brown. Once done, remove from the skillet and set aside.
  3. In that same skillet, add the grated garlic and sauté it until it’s golden and fragrant.
  4. Pour in the heavy cream and chicken broth, stirring in the chopped sun-dried tomatoes, fresh basil, thyme, oregano, parmesan, and chili flakes. Mix everything together thoroughly.
  5. Return the chicken to the skillet, ensuring it’s covered by the sauce. Allow it to simmer on medium-low heat for an additional 10 minutes.
  6. Garnish with fresh basil before serving for that final touch of flavor and color.

Notes

This dish can be paired with creamy mashed potatoes or a fresh salad. Avoid boiling the sauce when reheating to maintain its creaminess.
