  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Fresh basil leaves for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and black pepper. Add them to the skillet, cooking for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  3. Add the chopped sun-dried tomatoes and minced garlic to the same skillet. Sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream, then add the grated parmesan and dried Italian seasoning. Stir well and simmer gently.
  5. Return the chicken to the skillet, cooking for an additional 5 minutes, allowing the sauce to thicken and coat the chicken.
  6. Garnish with fresh basil before serving.

Notes

For a lighter version, swap heavy cream with half-and-half or use nutritional yeast instead of parmesan for a dairy-free alternative.
