A comforting and creamy pasta dish featuring tender chicken thighs and vibrant veggies, perfect for weeknight dinners.

Ingredients

  • 500 g Boneless Chicken Thighs
  • 2 tbsp Olive Oil
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 red peppers
  • 1 onion
  • 100 g sun-dried tomatoes
  • 2 tbsp tomato paste
  • 500 ml heavy cream
  • 300 g pasta of choice
  • 1 tbsp all-purpose flour
  • Fresh parsley to garnish

Instructions

  1. Season the chicken thighs with garlic powder, smoked paprika, chili flakes, salt, and pepper. Drizzle with olive oil; if you have time, allow them to marinate.
  2. Cook the chicken in a hot skillet over medium-high heat for about 7 minutes on each side until fully cooked. Transfer to a bowl.
  3. Sauté the diced red peppers and chopped onion in the same skillet for around 7 minutes until tender.
  4. Stir in the tomato paste and sun-dried tomatoes, letting them warm through for a couple of minutes.
  5. Pour the heavy cream into the skillet, add any remaining spices, and incorporate the chicken back into the mix.
  6. Create a slurry by mixing the all-purpose flour with a bit of water. Add this to the sauce to help thicken it.
  7. Toss in the cooked pasta, stirring until everything is coated evenly. Let it simmer for an additional 5 minutes to meld the flavors.
  8. Serve the pasta garnished with fresh parsley.

Notes

Don’t rush the browning of the chicken for better flavor. Feel free to add spinach for extra nutrition.
