A quick and nutritious breakfast that transforms ripe bananas into a delightful baked treat, perfect for busy mornings or leisurely brunches.

  • 3 Ripe Bananas (mashed well)
  • 1 cup All-Purpose Flour (or whole wheat as a substitute)
  • 1/4 cup Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1 pinch Salt
  • 1/2 cup Milk (or plant-based milk)
  • 1 teaspoon Vanilla Extract
  • 1 Egg
  • 1/2 cup Chopped Nuts (walnuts or pecans)
  • 1/2 cup Greek Yogurt
  • to taste Honey or Maple Syrup (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until they’re nice and smooth.
  3. Add the brown sugar, egg, milk, and vanilla extract to your banana mash. Mix everything together until well combined.
  4. In another bowl, combine the dry ingredients: flour, baking powder, ground cinnamon, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Fold in the chopped nuts and Greek yogurt to enrich the recipe with protein and creaminess.
  7. Pour the batter into a greased baking dish, smoothing out the top with a spatula.
  8. Bake for 25-30 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  9. Allow it to cool slightly before drizzling with honey or maple syrup for a touch of sweetness.
