  • 1 lb Chicken breast
  • 1 cup Coconut milk
  • 3 tbsp Soy sauce
  • 1 tsp Turmeric
  • 1 tsp Curry powder
  • 2 tbsp Brown sugar
  • 1/2 cup Peanut butter
  • 2 tbsp Lime juice
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Vegetables (optional)
  • Rice (optional)

Instructions

  1. Start by cutting the chicken breast into strips.
  2. In a bowl, combine coconut milk, soy sauce, turmeric, curry powder, and brown sugar. Mix until well combined.
  3. Marinate the chicken strips in this mixture for at least 30 minutes for the best flavor.
  4. Preheat your grill or oven to medium heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill or bake the chicken skewers for 10-15 minutes, or until fully cooked.
  7. For the peanut sauce, whisk together peanut butter, lime juice, minced garlic, and a drizzle of water until smooth.
  8. Serve the warm chicken satay with the peanut sauce on the side.

Notes

For deeper flavors, marinate the chicken longer, preferably overnight. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
