Delightful, fluffy beignets reminiscent of New Orleans, perfect for breakfast or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup water
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a bowl, combine the warm milk, water, and yeast. Let it sit for 5 minutes until frothy.
  2. In another large bowl, whisk together the flour, sugar, and salt.
  3. Pour the yeast mixture into the dry ingredients. Add the egg, vanilla extract, and melted butter. Mix until a dough forms.
  4. Knead the dough on a floured surface until smooth and elastic. Place it in a greased bowl, cover, and let it rise for about 60 minutes until it doubles in size.
  5. Punch down the dough, then roll it out on a floured surface. Cut it into squares.
  6. Heat oil in a deep fryer or pot to 350°F (175°C). Fry each beignet until golden brown on both sides, about 2-3 minutes per side.
  7. Drain on paper towels and dust generously with powdered sugar before serving.

Notes

Serve with coffee or hot chocolate. Store in an airtight container for up to two days or freeze for up to a month. Reheat in the oven to regain crispness.
