  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: diced tomatoes, bell peppers, or onions

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth.
  3. Stir in the chopped spinach and crumbled feta cheese until well combined.
  4. If you’d like, fold in optional ingredients like diced tomatoes or bell peppers for extra flavor.
  5. Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until the muffins are firm and slightly golden on top.
