Delicious and nutritious breakfast bites made with eggs, spinach, and creamy cheese. Perfect for busy mornings or weekend brunch!

  • 2 cups Fresh spinach, chopped
  • 4 oz Cream cheese
  • 1 cup Cheese (your choice)
  • 1/2 cup Coconut flour
  • 1/2 cup Almond milk
  • 2 tbsp Chia seeds
  • 1 Avocado, sliced

Instructions

  1. Preheat your oven to 350°F.
  2. Prepare your ingredients: chop the spinach, measure the almond milk, and mix the dry ingredients.
  3. Combine the eggs and cream cheese in a bowl, blending until smooth.
  4. Stir in the chopped spinach and your chosen cheese.
  5. Pour the mixture into a muffin tray or onto a skillet.
  6. Bake for 20-25 minutes or cook in the skillet until golden brown.
  7. Serve hot, accompanied by sliced avocado.
