Healthy and fluffy flourless pancakes made with cottage cheese, perfect for a quick breakfast.

Ingredients

  • 4 large eggs
  • 1/2 cup rolled oats (optional)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Combine cottage cheese, eggs, rolled oats (if using), baking powder, vanilla extract, and salt in a blender and blend until smooth and creamy.
  2. Heat a non-stick skillet over medium heat, adding a small amount of butter or oil.
  3. Pour 1/4 cup of the batter onto the skillet for each pancake, spreading it slightly with the back of a spoon.
  4. Cook for about 2-3 minutes until bubbles form on the surface.
  5. Flip the pancake and cook for an additional 2-3 minutes until golden brown.
  6. Serve warm with your favorite toppings.

Notes

For a gluten-free option, substitute rolled oats with almond flour. Let the batter sit for extra fluffiness.
