Delicious and fluffy pancakes made with cottage cheese, perfect for a quick, gluten-free breakfast.

  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt in a blender.
  2. Blend until the mixture is smooth and creamy.
  3. Preheat a non-stick skillet over medium heat and add a splash of butter or oil.
  4. Pour a ladleful of batter onto the skillet.
  5. Cook until bubbles form on the surface, about 2 to 3 minutes.
  6. Flip the pancake and cook until golden brown on the other side.
  7. Repeat with the remaining batter, adding more oil or butter as necessary.
  8. Serve warm with your favorite toppings like fresh fruit, yogurt, or maple syrup.

Notes

For extra fluffiness, don’t over-blend the batter. Store leftovers in an airtight container in the fridge for up to three days.
