A healthy, protein-packed take on pancakes that are fluffy and flavorful, great for busy mornings.

Ingredients

  • 1 cup Cottage Cheese
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1 tablespoon Honey or Maple Syrup (optional)
  • 1 tablespoon Butter or Oil

Instructions

  1. Combine cottage cheese, eggs, vanilla extract, salt, and baking powder in a blender or mixing bowl.
  2. Blend until smooth.
  3. If using, mix in honey or maple syrup for sweetness.
  4. Preheat a non-stick skillet over medium heat and lightly coat with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Stack pancakes on a plate and serve warm with toppings.

Notes

For extra fluffiness, ensure cottage cheese is well-blended. Adjust skillet heat to achieve golden brown color.
