Delicious breakfast burritos featuring crispy bacon, fluffy scrambled eggs, and fresh vegetables.

  • 6 strips bacon, chopped
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Salt and pepper, to taste
  • Optional: Hash browns
  • Optional: Hot sauce
  • Optional: Avocado

Instructions

  1. In a nonstick pan, cook the chopped bacon over medium heat until it’s crispy. Transfer the bacon to paper towels to absorb excess grease.
  2. In the same pan, add the diced bell peppers and tomatoes. Sauté for about 2-3 minutes until softened.
  3. Meanwhile, whisk the eggs in a bowl, then pour them into the pan. Scramble until they are fluffy and fully cooked through.
  4. Return the crispy bacon to the pan, add the shredded cheddar cheese, and stir until the cheese melts.
  5. Microwave the tortillas for about 20 seconds to soften them up.
  6. Place a generous amount of the egg mixture in the center of each tortilla. Fold in the sides and roll tightly to form a burrito.
  7. Toast the burritos seam-side down in the pan over medium heat for 2-3 minutes per side until golden and crispy.
  8. Serve hot or wrap them for easy meal prep during the week.

Notes

Add sliced avocado, sour cream, or hot sauce for serving. Burritos can be stored for up to 3 days in the fridge.
