  • 1/4 cup Flour (all-purpose or oat)
  • 1 teaspoon Baking powder
  • 1/2 cup Milk (any type, including dairy-free options)
  • 1 large Egg
  • 1 tablespoon Sweetener (honey, maple syrup, or stevia)
  • 1 teaspoon Vanilla extract
  • Fresh fruit, nuts, or yogurt (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the protein powder, flour, and baking powder in a mixing bowl.
  3. Whisk together the milk, egg, sweetener, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Grease a muffin pan and divide the batter evenly among the cups.
  6. Bake for about 15-20 minutes, or until the pancake bowls are puffed and lightly golden.
