A delightful breakfast treat combining ripe bananas and protein-packed cottage cheese for fluffy pancakes.

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Mash the ripe banana in a mixing bowl until smooth.
  2. Add the cottage cheese and eggs to the mashed banana and whisk everything together until it’s uniform.
  3. Combine the flour, baking powder, and salt in a separate bowl.
  4. Carefully fold the dry mix into the banana mixture, stirring gently until just combined to avoid overmixing.
  5. Heat a non-stick skillet over medium heat and coat it with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip to the other side and allow it to golden up.
