Delicious and nutritious egg bites packed with protein, perfect for busy mornings.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin generously with non-stick cooking spray.
  3. In a mixing bowl, whisk the eggs and cottage cheese together until smooth.
  4. Fold in the shredded cheese, diced bell peppers, chopped spinach, along with salt and pepper.
  5. Pour the mixture into the muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool for a few minutes, then gently remove the bites from the muffin tin.

Notes

Enjoy warm or store leftovers in an airtight container for up to four days. Reheat in the microwave or oven.
