Freezer Breakfast Burritos are a game-changer for busy mornings, filled with scrambled eggs, savory sausage, and melted cheese, all ready from your freezer.

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet. Cook, stirring occasionally, until the eggs are set but still moist, about 5 minutes.
  4. Remove the cooked eggs from the skillet and set aside.
  5. Warm the tortillas slightly in the microwave or on a skillet to make them pliable.
  6. Lay out each tortilla, and fill it with scrambled eggs, crumbled sausage, and both types of cheese.
  7. Fold in the sides of the tortillas and roll them tightly to create burritos.
  8. Wrap each burrito individually in plastic wrap, then in aluminum foil.
  9. Place wrapped burritos in a freezer-safe bag or container and freeze for up to 3 months.
  10. To reheat, unwrap and microwave on high for 1-2 minutes or until heated through.

Notes

Customize by adding veggies or swapping the sausage for turkey or plant-based options. Make sure not to overcook the eggs.
