Delicious and customizable breakfast burritos that are perfect for meal prepping and ready in minutes from the freezer.

  • 4 large flour tortillas
  • 1 cup frozen hash browns
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese
  • 1/2 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste
  • Salsa (for serving, optional)

Instructions

  1. Cook the frozen hash browns in a skillet according to the package instructions until they turn crispy. Once they’re done, set them aside.
  2. Whisk together the eggs and milk in a large bowl. Add salt and pepper to taste.
  3. Scramble the egg mixture in the same skillet over medium heat until fully cooked.
  4. Lay out a tortilla on a flat surface and layer it with crispy hash browns, scrambled eggs, cheese, and cooked sausage or bacon, if you’re using it.
  5. Roll the burrito tightly while folding in the sides to secure the filling.
  6. Wrap each burrito in aluminum foil to help retain freshness and place them in a freezer-safe bag.
  7. Microwave one for 2-3 minutes or until heated through when ready to enjoy. Serve with salsa if desired.
