A delightful dish that combines juicy steak bites, crispy potatoes, and rich eggs, perfect for brunch or a quick weeknight dinner.

Ingredients

  • 1 lb beef sirloin or ribeye, cut into bite-size cubes
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp fresh chopped chives or parsley
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp crushed red pepper (optional)
  • 2 cups potatoes, diced
  • 1/2 tsp garlic powder
  • 34 eggs
  • 1 tbsp butter or oil for cooking eggs
  • Pinch of black pepper
  • Pinch of dried herbs (parsley, chives, oregano)

Instructions

  1. Heat the oil: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Cook the potatoes: Add the diced potatoes and cook until golden brown and crispy. Season with paprika, garlic powder, salt, and pepper. Remove from skillet and set aside.
  3. Sear the steak bites: Add more olive oil in the same skillet and toss in the beef steak bites. Sear for about 2–3 minutes until browned.
  4. Add flavor: Mix in the butter, minced garlic, and optional crushed red pepper. Flip to coat steak bites, cooking until desired doneness.
  5. Add herbs: Toss in the fresh chives or parsley and remove from heat.
  6. Prepare the eggs: In a separate pan, melt 1 tablespoon of butter or heat oil over medium heat. Cook eggs according to preference, seasoning with black pepper and dried herbs.
  7. Serve: Plate crispy potatoes first, followed by garlic butter steak bites, and finish with the eggs.

Notes

For a different take, substitute beef with chicken or tofu. Customize herbs and spices based on your preference.
