  • 1.5 pounds baby potatoes, halved if large
  • 4 garlic cloves, minced
  • 1 cup freshly grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 3 tablespoons butter, melted
  • 3/4 cup chicken broth
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Rinse the baby potatoes thoroughly and cut larger ones in half for even cooking.
  2. Mince the garlic cloves finely to enhance their flavor.
  3. Pat the chicken breasts dry with a paper towel to ensure the seasoning sticks.
  4. Layer the halved potatoes at the bottom of the crockpot, and place the chicken breasts on top.
  5. In a bowl, mix melted butter, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Stir in the chicken broth until well combined.
  6. Pour the sauce over the chicken and potatoes for added flavor.
