Delightful fluffy pancakes made with Greek yogurt and bursting with juicy blueberries, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup milk (or almond milk)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • Butter or oil for cooking

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the Greek yogurt, milk, eggs, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the blueberries.
  5. Heat a non-stick skillet over medium heat and add a little butter or oil.
  6. Once hot, pour about 1/4 cup of batter onto the skillet per pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes on each side.
  8. Serve warm, topped with more blueberries or a drizzle of maple syrup.

Notes

For a lactose-free option, substitute milk with almond milk. Use fresh blueberries for best flavor.
