Light and fluffy Greek yogurt pancakes that are quick and easy to make, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup Greek yogurt (2% plain)
  • ¼ cup milk (or water)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or oil)

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a small bowl.
  2. Combine the Greek yogurt, milk, eggs, vanilla extract, and melted butter in a medium bowl. Whisk until smooth and creamy.
  3. Add the dry ingredients to the wet mixture gradually. Stir until just combined—don’t worry if a few lumps remain!
  4. Heat a large nonstick pan over medium heat for about 60-90 seconds, lightly greasing it with oil or butter.
  5. Pour ¼ cup of the batter onto the hot pan. Cook for roughly 2 minutes, or until bubbles form and the edges start to dry.
  6. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the pan between each pancake.
  8. Serve warm with butter, maple syrup, or your favorite toppings.

Notes

Feel free to add spices or fruit to the batter for different flavor variations.
