A delightful dish that combines juicy grilled chicken with fresh tomatoes, creamy mozzarella, and fragrant basil, perfect for summer barbecues or a simple weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 2 ripe tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced
  • Fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Begin by marinating the chicken breasts in olive oil, salt, and pepper for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked (an internal temperature of 165°F or 75°C).
  4. While the chicken is grilling, slice your tomatoes and mozzarella.
  5. Once the chicken is finished, remove it from the grill and let it rest for a few minutes before slicing.
  6. To serve, place the grilled chicken on a plate, layer with slices of tomato and mozzarella, adding fresh basil leaves on top, and drizzle with balsamic glaze.
