A vibrant and zesty chicken dish with fresh lime flavor, perfect for summer grilling and casual family dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Whisk together the lime juice, olive oil, minced garlic, cumin, chili powder, paprika, salt, and pepper in a mixing bowl.
  2. Place your chicken breasts in a resealable bag and pour the marinade over them. Seal the bag tightly and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and discard any leftover marinade.
  5. Grill the chicken for 6-7 minutes per side, or until fully cooked, aiming for an internal temperature of 165°F (75°C).
  6. Remove the chicken from the grill and allow it to rest for a few minutes.
  7. Garnish with fresh cilantro and serve with your favorite Mexican sides.

Notes

For a different flavor, swap lime juice for lemon, or olive oil for avocado oil. Add diced jalapeños to the marinade for extra heat.
