A flavorful grilled chicken dish marinated in salsa verde and topped with melted Pepper Jack cheese, perfect for weeknight dinners and BBQs.

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Pepper Jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Combine salsa verde, olive oil, garlic powder, cumin, salt, and pepper in a mixing bowl. Stir until well combined.
  3. Add the chicken breasts and coat each piece thoroughly with the marinade. Allow them to marinate for at least 30 minutes.
  4. Place the chicken on the grill and cook for about 6-7 minutes on each side until fully cooked.
  5. Sprinkle the shredded Pepper Jack cheese atop each breast during the last few minutes of grilling.
  6. Remove the chicken from the grill and garnish with chopped cilantro. Serve warm.

Notes

Let the chicken marinate longer for even better flavor. Different cheeses can be used based on preference.
