A vibrant tropical dish featuring marinated chicken, caramelized pineapple, and creamy coconut rice, perfect for any occasion.

Ingredients

Scale
  • 2 chicken breasts
  • 2 pineapple slices
  • 1 cup coconut rice
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons lime juice
  • 2 green onions, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, mix together soy sauce, minced garlic, grated ginger, and lime juice. Add the chicken breast, making sure it’s evenly coated. Allow it to marinate for at least 30 minutes for the best flavor.
  2. Cook the Chicken: Preheat your grill to medium heat. Grill the marinated chicken for about 6-7 minutes per side, or until it’s golden brown and fully cooked through.
  3. Prepare the Coconut Rice: Cook the coconut rice according to the package instructions, but substitute water with coconut milk for a richer flavor.
  4. Grill the Pineapple: Place the pineapple slices on the grill and cook for approximately 4-5 minutes per side until they’re beautifully caramelized.
  5. Plate and Serve: In a serving platter, layer the coconut rice, top with grilled chicken, add caramelized pineapple, and sprinkle with chopped green onions for a fresh finish.

Notes

Use fresh ingredients for the best flavor. Consider adding a splash of lime juice or sweet chili sauce for an extra zing.
