Fluffy and light fritters bursting with juicy blueberries, perfect for a nutritious snack or delightful breakfast.

Ingredients

  • 1 1/2 cups flour
  • 1/4 cup monk fruit (or other sweetener)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 3 tbsp butter
  • 11 oz Greek yogurt
  • 1 cup blueberries
  • 1/2 cup powdered monk fruit (for glaze)
  • 1/8 tsp vanilla extract (for glaze)
  • 1/4 cup almond milk (for glaze)

Instructions

  1. Preheat your oven to 350°F and grease a mini 24-count muffin tin.
  2. In a large mixing bowl, whisk together the flour, monk fruit, baking powder, and salt.
  3. In another bowl, add the egg, melted butter, vanilla extract, and Greek yogurt; mix until just combined.
  4. Gently fold in the blueberries until evenly distributed.
  5. Scoop the batter evenly into the muffin tin.
  6. Bake for about 15 minutes, or until the fritters are golden brown.
  7. While they’re baking, prepare the glaze. Combine the powdered monk fruit, smashed blueberries, vanilla extract, and almond milk in a bowl.
  8. Once the fritters are baked, dip each one into the glaze and place them on a parchment-lined baking sheet.
  9. Broil the fritters for approximately 5 minutes, turning halfway through.
  10. Remove from the oven and drizzle any leftover glaze on top. Enjoy!

Notes

Do not overmix the batter. Keep an eye on baking time as ovens can vary.
