Delightful muffins packed with protein and fiber, perfect for a quick and healthy breakfast or snack.

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, protein powder, honey (or maple syrup), Greek yogurt, eggs, baking powder, baking soda, vanilla extract, cinnamon, and salt. Mix until just combined—don’t overmix!
  4. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds.
