Delightful pastries bursting with sweet and tangy berries, made with wholesome ingredients for a healthy treat.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 1 egg (optional for brushing)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the whole wheat flour, baking powder, and a pinch of salt in a mixing bowl.
  3. Blend together the Greek yogurt, honey or maple syrup, and vanilla extract in a separate bowl until fully combined.
  4. Gradually mix the dry ingredients into the wet mixture, stirring gently until a dough forms.
  5. Fold in the mixed berries, being cautious not to crush them.
  6. Roll out the dough on a floured surface and cut it into your desired shapes.
  7. Arrange the pastries on a baking sheet. Brush them lightly with a beaten egg for a golden finish, if desired.
  8. Bake for 15-20 minutes, or until golden brown.
  9. Let the pastries cool before serving.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Reheat in the oven at 300°F (150°C) for about 5-7 minutes for best results.
