Delightful Healthy Chicken Enchiladas that combine tender chicken and fresh vegetables in soft tortillas, topped with creamy sauce and cheese. A comforting yet light dish.

  • 2 cups cooked, shredded chicken
  • 1 cup fresh vegetables (e.g., bell peppers, onions, spinach)
  • 8 soft tortillas
  • 1 cup sour cream or Greek yogurt
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (e.g., cheddar or Monterey Jack)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken with the chopped vegetables, garlic powder, onion powder, cumin, salt, and pepper. Mix thoroughly to let the flavors meld.
  3. In a small saucepan over low heat, combine sour cream (or Greek yogurt) and chicken broth, stirring until you have a smooth sauce.
  4. Spread a thin layer of the sauce at the bottom of a baking dish.
  5. Take each tortilla, fill it generously with the chicken mixture, and roll it up, placing seam-side down in the baking dish.
  6. Pour the remaining sauce evenly over the rolled enchiladas and sprinkle the shredded cheese on top.
  7. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and lightly golden.
  8. Serve while hot and enjoy!
