Delicious and fluffy muffins made with Greek yogurt and chocolate chips, perfect for breakfast or snacks.

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup Greek yogurt
  • ¼ cup neutral oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips
  • ½ cup milk

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Mix the Greek yogurt, oil or melted butter, eggs, milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry mixture, gently folding until just combined. Be careful not to over-mix.
  5. Fold in the chocolate chips, saving a few for topping.
  6. Divide the batter among the muffin cups, filling each about ¾ full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.

Notes

These muffins can be stored in an airtight container for up to 3 days or refrigerated for a week. They can also be frozen for up to three months.
