  • 1/4 cup milk
  • Salt and pepper (to taste)
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/4 cup finely chopped onion
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese
  • 1/4 cup cooked and crumbled turkey bacon or sausage (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it with nonstick spray or lining it with muffin liners.
  2. Whisk together the eggs and milk in a large bowl until fluffy. Season with salt and pepper to taste.
  3. Fold in the chopped spinach, diced bell peppers, onion, cherry tomatoes, shredded cheese, and turkey bacon or sausage if using.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake in the preheated oven for 20 to 25 minutes, or until the muffins are set and lightly golden on top.
